Confiture de sucre gradually evolved into what we know today as caramel.

The process used to make modern day caramel is called “caramelization” which involves heating sugar until it melts and browns, giving it its signature color and flavor. The discovery of this process was made by accident when French confectioners accidentally left some boiling sugar out too long. The result? A new way to enjoy sweet treats!
